Types of Saffron
If you use saffron, you already know that there are different types. These saffron varieties differ in terms of price, which is based on characteristics such as color, fragrance and volume.
The four main types of saffron offered by saffron distribution companies, which are presented in distinct packaging for easier identification, are NEGIN, SARGOL, POOSHAL and DASTEH.
The different categories are based on the part of the saffron plant which is included in the saffron offered for purchase. The name of the company, region of origin or color does not determine the category. All saffron you may see for sale in markets falls into one of the four major categories.
Below we will consider the four main categories of saffron and their main features. Keep in mind that red saffron comes from the stigma and yellow saffron comes from the style of the saffron crocus.
The whole style is used in this product. If you look at the image, you’ll see both red stigmas and yellow ‘cream’ together. This product is considered the most basic type of saffron, because both parts of the stamen are present and they have been dried together.The yellow section makes up about 3 to 5 mm or 25 – 30% of the product. The red section, which can be longer or shorter, makes up about 70 -75%.
When drying, two methods of ‘embedding’ are used, ‘one-way’ and ‘two-way’. In one-way embedding, red is placed on red and cream on cream, whereas in two-way embedding, red is placed in the middle and cream is placed on both sides. Two-way embedding attracts more customers because the red is clearer.
This product is also known as Dokhtar Pitch Saffron and Dokhtar Pitch Dasteh. It is considered to be ‘Grade 4 Saffron’. Abroad, it may be referred to as ‘bunch’, ‘dasteh’ or ‘red and white’. It is less colorful than other types of saffron. Also, since it has less stigma, it has less odor.
Pushal Saffron has a slightly yellowish appearance compared to other types of saffron because 2 to 3 mm of style (‘cream’) is left on the stigma (the red part) when it is cut.
Customers tend to be more confident about this product because the combination of some cream with the stigma gives it recognizable characteristics.
This type of saffron is graded from 1 to 3 for sale purposes.
To produce this type of saffron, the red part of the saffron is cut off then carefully separated from the yellow or white part using static electricity. The red part is offered for sale separately from the rest.
Sargol Saffron is also known regionally by names such as Sar Ghalam (head of pen), Sar Risheh (head of the root) and Excellent. Excellent Saffron also has some ‘cream’, or whiteness. It is used more often than the other types of saffron.
This type of saffron is known abroad as All Red (completely red).
Super Negin Saffron
This saffron has many similarities to ordinary saffron. However, it is thicker and more robust than ordinary saffron. It is also very fragrant, large and beautiful. It has excellent coloring properties.
